This parfait looks beautiful and impressive in a parfait glass, but it's also a great on-the-go snack if you construct it in a re-sealable plastic container. I particularly love it in summer months when cherries are at their peak. In the winter, you can always use frozen cherries—just make sure to find a brand with no added sugar.
Spoon 1/3 cup of the yogurt into the bottom of a parfait or wine glass. Top the yogurt evenly with the cereal, followed by ¼ cup of the cherries. Repeat with the remaining yogurt and cherries. Top with the almonds. Serve immediately or cover with plastic wrap and refrigerate for up to 1 day.
